Fuel My Friday: Firth's Fruit Acai Smoothie Bowl

With the British Summer heatwave upon us, Bethany Firth provides a #FuelMyFriday recipe that will help you cool off and refuel on a hot sunny day.

Multiple world record holder and four time Paralympic champion Bethany Firth serves up an fruit acai smoothie bowl recipe this week that can be assembled in just minutes! Acai, an antioxidant rich berry native to South America can commonly be found in the UK in powder or frozen puree form.

This smoothie bowl is great for a quick, easy option to cool off and refuel in the warmer weather. There's so many options as to what you top if off with but I've suggested one of my favourite combinations below.

Ingredients

Acai smoothie bowl

  • 2 tsp acai powder
  • Handful frozen mixed berries
  • 1/2 a ripe banana
  • 4-5 large ice cubes
  • 100ml water

My chosen toppings

  • Chia seeds
  • Banana
  • Blueberries 
  • Honey

Method:

  1. Put the acai powder, frozen berries, banana, ice cubes and 100ml water into a blender and whizz until smooth.
  2. Pour out into a bowl and add your choice of toppings - I like to add chia seeds, sliced banana, fresh blueberries and a good drizzle of honey!
